I was curious if you guys know of any particular resources that could help someone with almost zero coding experience become at least mildly proficient in the use of LambdaMOO, as well as any free server cores that can run on windows?

if you want to run a server on windows, you should use WinMOO
i suggest just using lambdacore.db
you can also use minimal.db or rpgcore.db

the best core by far is hellcore.db
but that doesn't work with WinMOO, only linux..

or just play the actual LambdaMOO and request a programmer bit
do tutorials, read help files, @list #obj:verb, learn to use eval
